Mas tenho evitado frituras, portanto busquei uma alternativa para não deixar de comer o bendito carré.
Tentei algumas vezes até chegar à essa receitinha. Mas antes, vamos conhecer um pouquinho dos cortes suínos:
O suíno é bem menos complexo e os cortes são conhecidos de todos. Assim como o boi é possível usar praticamente toda a carne e gordura do porco.
Além dos tradicionais Lombinho, Costelinha, Filezinho mignon, carre, pernil e picanha suína pode-se retirar muitas partes bastante usadas na nossa culinária como bacon, toicinho, orelha, joelho, que são muito usados em feijoadas.
Até queijo de porco tem gente que faz, detalhe, o queijo de porco não é um laticínio e sim um embutido tipo presunto. Segue o mapa do suíno para churrasco.
Agora sim vamos à receita:
- Bata no liquidificador 1 cebola grande (ou 2 pequenas) , 7 dentes de alho, meio copo de suco de limão ou vinagre, meio copo d'água, meio pimentão, 1 tablete de caldo de bacon, sal e pimenta à gosto;
- Faça um creme bem grossinho.
- Coloque 5 carres descansando nesse tempero por no mínimo 30 minutos na geladeira;
- Na panela de pressão, coloque rodelas de cebola no fundo. Intercale as cebolas, os carres e por último o creme do tempero. Acrescente 2 folhas de louro e uma pitadinha de orégano e salsinha. Feche a panela, e marque 10 minutos após o chiado. Desligue o fogo, espere sair a pressão.
- Passe para outra panela os carres e apenas metade do caldo. Acrescente uma colher de extrato de tomate e meio copo d'água. Nesse momento, pode acrescentar batatas. Deixe ferver por mais alguns minutinhos e pronto!
Fica saboroso, macio e sem uma gota de óleo!!!
Você pode servir na panela ou passar para um refratário, ou até mesmo assar por um tempinho...

Obs.: É claro que não vou ser hipócrita de dizer que não prefiro o carré frito, mas precisamos fazer opções saudáveis. O carré na panela de pressão também é delicioso, e muito menos gorduroso!
